The menu
Food at Kuza is made to share, izakaya style. Order a few cold plates, a few hot ones, some sushi, and pass everything around the table. (V) is vegetarian, (GF) is gluten free, and many dishes have a GF or vegetarian option on request.
We are a cashless venue. Surcharges: 10% on Sundays, 15% on public holidays, 1% on Visa, Mastercard and EFTPOS, 1.5% on American Express.
To start, cold
Kuza's tuna tartare blend with Japanese pickles, yuzu pepper aioli and crispy nori crackers.
Scallop crudo with truffle and shitake relish on hash frites.
Fiery pepper sauce with Japanese pickle and sake; or ponzu sauce with raw quail egg, salmon caviar and sake.
Seaweed and cabbage salad with tomatoes, Kuza's goma sauce, toasted sesame seeds.

Crispy tempura popcorn shrimp, mayonnaise, toasted sesame.

Katsu free-range pork loin with Japanese-style curry.
Prawn and vegetable tempura, tentsuyu sauce, bonito flakes.
Fried spiced cauliflower with miso coconut yogurt.
Pan-fried, roasted pepper sauce and shoyu vinaigrette dipping sauce.
Handmade prawn and scallop ravioli, shitake and burnt miso butter sauce.
Steamed black cod and tiger prawn gyozas, spicy black bean and sake sauce.
From the grill
Teppanyaki style with pancetta, edamame, shitake, feta and butternut pumpkin sauce.
Grilled, with pine nut, miso and pesto sauce.
With umeshu plum wine sauce, kale and sesame dressing.
Twice cooked, teriyaki ginger glaze, roasted apple miso and parsnip slaw.
Two ways: on the tobanyaki hot plate with shoyu pepper sauce, mixed mushrooms and vegetables; or with miso bearnaise and teriyaki reduction, Japanese pickled onions and sweet potato crisps.
With wafu sauce and miso cream.
Rice & sides
Grilled unagi with kabayaki sauce, rice, pickles and egg.
